Frozen Cherry Bites
Hello Sweet Summertime! We’re celebrating the season with a cool and healthy summertime treat that is quick and oh so fun to make with little ones. This a great Farm to Table inspired recipe that delivers a healthy punch with plenty of antioxidants, fiber and vitamin C in the cherries and live probiotics in the organic yogurt. The mock graham cracker crust is actually our homemade granola.
This is such a fun recipe to do with your pre schooler! Little ones learn to measure and count, follow a pattern and get goopy with all healthy ingredients. They practice a little patience while waiting for the bites to freeze but since they are small, the wait is short!
You’ll need a silicone ice cube tray. We purchased ours at Bed Bath and Beyond.
Ingredients
1 C washed and seeded organic cherries, chopped roughly (use any berries you would like if you don't like cherries)
1 T. honey- We love this Honey
2 C granola
Directions
Mix honey with yogurt.
To assemble each bite layer in each section ice cube tray in this order: 1 T. granola, 2 T. yogurt and honey mixture, 1 T. chopped cherries.
Cover with plastic wrap and freeze for 4-6 hours.
Remove from tray and wrap individually in plastic wrap and store in airtight container or serve immediately. This makes a great family friendly option for summer evenings catching fireflies!
