Summertime Butternut Squash Recipe

Who doesn't like a delicious homemade soup? This soup is super easy to make and it's full of so many healthy vegetables and even a fruit! This dish is great when served with a fresh garden salad or grilled chicken! Soups are a great way to introduce veggies in a different way to your child. This recipe calls for 1 butternut squash... but if you don't feel like chopping it up yourself (I didn't either!) feel free to buy yours pre-chopped and packaged (usually near the bagged lettuce) at your local grocery store. I love these sort of recipes where you have the opportunity to teach your kids about where each ingredient comes from!

Ingredients:

  • 1 medium yellow onion, chopped

  • 1 cup chopped celery

  • 1 cup chopped carrots

  • 2 Tbsp butter

  • 1 butternut squash, peeled and chopped (6 to 8 cups)- I buy organic prepared chopped butternut squash near the bagged lettuce

  • 1 tart green apple, peeled and chopped

  • 3 cups chicken broth (or vegetable broth)

  • 1 cup filtered water

  • Season with cinnamon, cayenne, nutmeg, salt and pepper

Directions:

  1. In a large pot, sauté onion, carrot and celery in butter on medium high for 5 minutes. (If the veggies start to brown turn hear down.)

  2. Add squash, apple, broth, water, then simmer: Now, add the butternut squash, apple, broth and water. Bring to boil. Reduce to a simmer, cover, and simmer for 30 minutes or so, until the squash and carrots have softened.

  3. Next, purée the soup: Use an blender (I use a Vitamix) to purée the soup. If it's easier, work in batches to purée the the soup.

  4. Season with nutmeg, cinnamon, cayenne, salt, pepper.
